Football Finger Foods

Well….it’s that time again, football time! While the allure of the game is lost on me, I have to say I love cooking great food for the games. Quick and easy snacks are my favorite because it makes it easy to feed my hubby. So without further ado… here are some quick and easy ideas for snacks to make before the game or during half time. Enjoy.

 

Pizza Rolls

What you will need:

Croissants, pizza sauce, pepperoni and mozzarella cheese.

 

Order of operations:

Put all the sauce, cheese and pepperoni inside the croissants, roll them up and cook according to the croissant directions.

All done.

 

Cheesy Bacon Potato Skins

 

What you will need:

6 potatoes

1 package of bacon (6 strips)

Canola oil

Salt & Pepper

4oz. grated cheddar cheese

1/2 cup sour cream

2 green onions

 

Order of operations:

Bake the potatoes for about an hour in the oven (or if you are in a hurry – the microwave)

Once the potatoes are done – let them cool and cook the bacon in a frying pan – drain the grease and set out to dry on a paper towel. Then crumble the bacon when it has cooled off.

When the potatoes have cooled off, cut them horizontally in half and scoop out the insides, leaving only the thin crust with about a 1/4 layer of potato still in it.

 

Using the rack in the oven (note: no cooking pans here they will warp – so just put some aluminum under the rack to catch anything that falls, this helps with clean up) coat the skins of the potatoes with the oil until they are covered both inside and out. Sprinkle them with salt. Then cook the skins until they have a nice crisp layer on the outside. This should take about 10 minutes on each side.

 

Place each of the potato skins on a baking pan and sprinkle in the bacon and the cheese and put them back into the oven until the cheese has melted and is bubbly.

 

Remove and let cool. Then add a spoonful of sour cream and some chopped up onions, along with pepper if you like.

Since this is a finger food, it is really easy to just pick them up and eat them while watching the game (or a movie), and if you use your imagination, you could even say they kind of look like mini footballs.

 

 

Mini Croissant Dogs

 

What you need:

Hot Dogs or Hillshire Farms Little Smokies

 

2-3 packages of croissant rolls (depending on how many you want to make.)

 

Order of operations:

Roll up the Hot Dog or Smokie in the Croissant roll.

Bake according to the package.

 

All done.

 

 

Maple Meatballs

 

Cooks these little snacks up in your slow cooker and by half time you will have a great snack.
What you need:

3 pounds of Casa De Bertacchi Italian Meatballs

1 1/2 cups of maple syrup

1 1/2 cups of chili sauce

2 table spoons dried chives

1 tablespoon soy sauce

1/2 table spoon ground mustard

 

Order of operations:

Mix the maple syrup, chili sauce, dried chives, soy sauce and ground mustard together in a bowl.

 

Place the Italian Meatballs in the slow cooker and pour the mixture over it.

Cook for about 4 1/2 hours on high.

 

Done, you can serve these up on a plate and if you want to be fancy you can even add toothpicks for easy grabbing.
